Keto Day 1 Check-in​!

Today I am considering the first day of my Keto diet.
I made a mistake and went shopping for food that I wanted to say goodbye to this weekend, but I also did the shop whilst hungry! So I ended up with more food than I could eat in 2 days. When I came yesterday after an evening of watching people eat carbs, whatever food we had left that was not Keto in any way shape or form, was eaten. It was not a very impressive start to a new diet!
I left my Sorbet out to defrost so I couldn’t eat it tonight! That is how bad I felt after eating carbs. So today is my first day of Keto and I will learn from my hungry shopping. Don’t do it!

Today was pretty good. No sugar crashing yet, but I have started the Keto flu early. It is probably my allergies acting up but it is about to start. The last time I did the Keto I had the flu for 2 weeks, so I can just see it lasting longer this time around as I have just recovered from the worlds longest cold I have ever hard and my immune system took a kick because of it. I will push through even though it is the hardest thing I have to push through. I feel like I am ill quite a lot and I really do not feel or like being ill the amount I am. I am just taking tablets for it and hoping to stop it as much as possible. I am going to try serval things to see what works best to kick the Keto flu the best and report back.

I am starting my day off with having a Vega shake first thing in the morning and it is an amazing thing! Vega is a vegan nutrition product. The one that I have in the morning is  Vega One All in One Nutrition Shake. It is a powder that includes your daily nutrients and multivitamins you need in a day. One scoop is 3 net carbs!

I can have this shake first thing in the morning and I’m good until lunch. I am really hoping this is going to help me in the mornings with my early starts and just helping me get all the daily nutrients without having to make sure it all fits into my diet with low carb food. It is probably possible to do it, but meh its 3 net carbs, I’ll cope!

So going forward and what to expecting in the next couple of weeks I am reading some books on Keto and will review them once I have sunk into them. I am also planning on posting some meals that I have tried and tested (Once I have tried and tested them!).


Anyway, this is all for now. I just wanted to check in and let you know that I have started the Keto and that today is my first days of getting myself together!

She’s at it again!

So this is Rosie checking in for the billionth time and not actually sticking to blog posting.

I have a huge backlog of posts, but just never physically got round to tagging it all, because it takes so god damn long to do!!!

At 24 I have finally got to the stage where I have completed nothing. I finished my degree and worked three jobs at the same time and then very quickly moved to Canada, but for some reason, this is not going to be my crowning glory. I do not want to be remembered for that small period of my life forever.
I have gotten to the point in my life where I need to make some changes and I need to make them now.

First on my long list is my weight.

Moving to Canada was a great idea because all the expensive import food I craved as a teenager became cheap. Pizza pops, Twizzlers, Root Beer and Hershey’s White Cookie Chocolate have quickly become my best friend and my waists worst enemy.
So this time I’m publicly shaming myself and my indulgences so that I actually get on with it and lose the weight this time.

I will eventually post a picture when I actually feel confident enough to do it, but for now, I can say in the last year, my weight has gone up quite a large amount. Mostly in my tummy area and the tops of my legs, but I know that sticking to my diet and actually doing some exercise is going to help.

So what is the lucky diet this time I hear you ask?
Keto… for the 3rd time.

Now the reason this is the 3rd time I have tried Keto is not because it does not work, because it does and I get great results, its just that some sort of holiday happens and I fall off the wagon at the first chance I get, then I feel like I need to make up for lost time, eat all the carbs and its an endless cycle of Rosie’s chub!

This time, I’m going to journal everything.
Not everything, remember I am Rosie and moderately lazy.
But I’m going to post my favourite recipes, how my exercising is coming along and how my mood is.

My plan (You’ve heard this before if you have read any of my other posts) is to post about 3 blog posts a week.
-Food and general diet.
-Mental Health and lifestyle.

This may or may not work, but I’m going to give it all a go.
So my prep for the new start begins today. I’m going to having a massive clean up, clean out and some food shopping to get some prep done so I can start tomorrow. I may do a daily catch up if I feel like it for the first couple of weeks, so we can future evaluate whats going on.

For now, I’m going to eat every carb in sight and hit it hard tomorrow.
Keep those fingers crossed for me!


Where am I a year after leaving the UK?

A year ago I left the UK. I got on a plane with my family and I left for greener grass on the other side.

I did intend on blogging this whole time and keeping everyone up to date with everything that happened on this trip, but after not having internet towards the end of the trip and then wanting to spend more time with my parents/ family before I had to leave them crying in a ball on tears at Boston Airport, I never finished blogging.
Its amazing how life can get away from you very quickly before you realise.


Anyway, Where am I now?

Well I’m still in Vancouver, BC at the moment, currently sat on the sofa watching a programme about Russian History whilst I recover from having my wisdom teeth removed.
For the moment I still work at William F. Whites, a film rentals company, but everything is about to change all over again.

I’m about to move to the Island. Vancouver Island that is, not the mysterious one with Ewan McGregor and Scarlett Johansson.
So about 8 months ago I met this guy who turned out to be one of the best people I have ever met. He even made the trip home with me in April for a week, meeting family and being dragged around Primark (Its okay, he really loved the cheap clothes!). Due to lots of different circumstances, he has decided that he wants to move closer to family and I was asked to go with him. I said yes after loads of crying and long distance phone calls to my Mum.
I’m currently in the process of applying to stay in this wonderful country I have started to call home, but if everything starts to fall to pieces do I really want to say that I stayed in Vancouver the whole time and worked Monday to Friday 9-5 and not travelled very much. No I don’t.

So this is where I am at…. a year after getting on the plane to Boston and starting to make my way to Canada.

On my Canaversary I shall write a more indepth post about my time in Canada and what I have actually done with my time.
I still don’t regret this move and I am still loving every day, and even on the harder days I have someone to help me through the crap.

I’m moving to New York because I have problems with my sleep.

Well I am on a train again and I have kicked the jet lag out of the ball park whilst in New York. When they say its the city that never sleeps, they literally mean it. There is so much to do its crazy! Of course we did the obligatory shopping and main tourist attractions.

So after getting off of the train on Saturday, we walked straight to our hotel, which was across the road… Well planned I know! We were staying opposite Penn Street Station, which is home to Madison Square Garden. We stayed in the New Yorker. It was a beautiful 1940’s Art Deco building and had the original interior to match it.
I yet again shared a room with my Parents, but this time I had a bed to myself and I didn’t have to sleep on the floor.

We arrived at about 5pm and decided to wash up and explore straight away. The first thing we did was walk down 8th Avenue, which is the Fashion district and have a wonder up the Empire State building.

It was incredible! The sites at that time of evening were beautiful and it made you forget the heat. And it was very hot!

I can not describe what I saw and the photos I did take wont do it justice. It was one of the most beautiful things I have ever seen. The photos required very little colour correction, which was amazing.

I had my first experience in Sephora. It is so much better than any thing else in the UK. I brought a setting spray, which has become my new favourite thing in this heat, a Kat Von D Lipstick in a lilac shade and I got a free cleanser because I signed up to be a member. They have one in Vancouver and I can tell that I am going to spend a lot of my money in there!

Anyway, once we had done that and ventured around some of the shops, we went to dinner at a little Pizzeria. We had an 18 Inch pizza between 5 and a slice of it was the size of my head! It was more than enough to fill me up. Once we had a food baby, we went back to the hotel and we slept.

Day 2 was crazy busy. It was Sunday and you would think that it wouldn’t be as busy, but I was wrong. There were tourists everywhere and the fact I compared it to London says a lot.

We walked to Times Square and had Breakfast in the Hard Rock cafe. It is certainly not every day that you get to eat your raisin brain next to a t-shirt worn by Slash and listen to Kiss by Prince, whilst staring at his shoes. It was really over priced for what it was, but it was a good experience, but I wont be doing it again.

We also became serious tourists and jumped onto a Big Bus… like the ones in London that are opened topped. This one we went on, went up town and down town. I felt that it was a good way to see the city and was worth the money. Because it was hot, it meant that we weren’t walking everywhere and we got to see more than we would have if we were walking everywhere. You could jump on and off when ever you liked and we decided to jump off at the 9/11 memorial.

It was surreal to actually stand where the twin towers once stood. Everyone remembers where they were when they came down and everyone knows that it was the incident that changed the world for ever.

It was a really beautiful area and everyone there was paying their respects. We were all there for one reason and one reason only. I really did enjoy this bit of my day.

Once we had finished the tour we did some more shopping and went to an American diner for dinner. It wasn’t that nice, but I was hungry and would have eaten a horse.

So I am on the train to Philadelphia for the next leg of the trip. Don’t actually know what we are going to do on this trip, but I am excited about this part as it is something no one in the family has done.

Boston Train Ride Blog Post 

Good Afternoon from a train track moving from Boston Back Bay Station to New York City Penn St Station. The family and me are currently travelling to NY via a really rickety train zooming through the American Country. Unfortunately my brother gets travel sick, like me and my mother, so we have the curtains closed so that I can’t see anything coming past.

We are travelling via train because it was the most cost affective way to do it for a group of 5 and it was quicker than getting a coach. Overall I would rather sit on a London Midland train travelling to Edinburgh, even though we are in business class. There is hardly any space for luggage so I am on a constant look out for people going for our luggage. But we’re moving on to our next location.
New York.

So yesterday we spent the day walking around Boston. There is so much to see and do, but when there is a weather warning saying how hot it is going to be, you may need to pay attention and find some places to visit that have Air Con. You could spot the Brits from a mile away because we were the only idiots walking around the city at 2pm in the afternoon when the sun was at its hottest. We are all burnt, but I have a new found love for Air Con and blister plasters!

I also think my dress melted because it was that hot. It was short at the beginning of the day and down by my ankles by the time I collapsed in the hotel room at about 4pm.

We left the hotel at 8.30am and started walking towards the Boston Tea Party Museum. It was on the Charles River and it was beautiful to look at with most of it and 2 replica ships on the river itself. As tourists do, we decided to do the reenactment tour.
We were all given a small card that had a name of someone who was involved in the Tea Party. At first I honestly thought it had something to do with George Washington and the signing of the declaration of Independence, but it wasn’t. The Americans hundreds of years ago were run by the British. The king at the time, King George the Third, began a tax on Importing tea into America. Therefore a rebellion started and the people of Boston decided to Dump the tea from the Ships into the river.
So we walked around for a while and I was given the name Thomas Melville. The Grandfather of Herman Melville, the author of Moby Dick. This dude had a few important moments throughout the tour and was often brought up by the actors.So I was started at really awkwardly throughout the day.
But it was really fun and I enjoyed myself. I loved the gift shop as it was full of Tea and being a Brit who has done nothing but drink nasty old tea for 2 days, I decided that I would give it a miss and expected there to be more bad tea.
(If someone read this, I didn’t bring tea bags because I’m an idiot and forgot… if you send any parcel, send Tea Rations!! )

Anyway after that we walked up the coast and toured the Harbour. It was really hot so it felt like the longest walk of my life… and I have done my Duke of Edinburgh.

We eventually got the Subway to Fenway. We didn’t actually go to Fenway Park and have a tour around the grounds… no we went to the gift shop across the road and spent an hour in there looking for something for my large brother to buy. I would like to add that my brother is really tall and for some reason nothing fit him.
But I brought a Red Socks Cap, which looks pretty great on. I’m a happy bunny with that and it means I can keep the sun out of my eyes for some of the trip… and cover up bad hair days.

We then had pizza, watched a lot of American TV and went to sleep again. The TV IS CRAP… mostly just adverts and people moaning about the heat and news. There is a lot about the presidential vote and what not. I have to admit it is more mind numbing than the Brexit TV.

So we are on a train heading towards New York and I’m pretty excited. I’m sure I’m going to love it and I will check back in on tomorrow evening.

Goodbye UK, Hello Boston!

So today I finally made the trip from the UK across the pond to Boston for the first leg of my trip.
For the first 2 weeks I am lucky enough to have my family travel with me and have to cut split a little. Although at first this may sound like a god send, it is slowly turning into a nightmare due to me quitting smoking and the high level of stress that airports seem to bring with them.

We left the house at 6:30am GMT this morning and made our way to Heathrow. We got their, checked in our bags and went through security really quickly. I was surprised at how quick we did it, but it meant that we could have some breakfast and chill out. I then realised that I forgot my teddy and was horrified at the thought of going to sleep without him. I’ll find a replacement until may family get home and send him out.

Anyway, so we flew out with British Airways at 11:15am GMT and made our way across the pond.
It was the longest 7 hours of my life.
I did watch a couple of films (Deadpool, Room, The Jungle Book) and fell asleep for some of it. I got really bored and every part of my body was starting to fall to pieces after a while.
But we made it.

I was quite nervous about going through American Immigration, but it was fine. There were no horror stories and everyone was really nice.
So far Boston is a really nice place to be!

We got to the hotel and realised that we were a bed down, which now means that I am sleeping on a mattress on the floor. Which I am not overly happy about, but I am in Boston for a whole 2 nights and I am half asleep anyway. So we are trying to go to bed really late and trying get rid of any type of jet lag that we will get. So we are currently having a night in after a trip out for Dinner to 5 Napkin Burgers and 7 Eleven.
I am really impressed with the amount of customer service in America so far! I got a bottomless Root Beer  and kept those bad boys coming. I am trying to eat something green with every meal and I succeed today. We shall see how long that lasts.

We have a long arse day tomorrow, so I will write another blog post on the Train on Saturday, when we move on to New York!

9 Days to go!!

It is full speed ahead! There is so much to do and not enough time to do it. I’m so busy working right up until the last bit I can’t seem to find time to sort everything out. My first tip if you were thinking about an IEC… book some more time off before you leave. You may thank yourself from escaping from the stress!

But I thought I would let you know some of the important things I have found helpful. A lot of it is going to cost some money, but I’m pleased with the purchases, I’m also happy know I’m am covered.

The first one is Insurance! 

In Canada they have their own health care which is similar to the British version of the NHS. Unfortunately as a IEC you wouldn’t classify for it and you will need health insurance. After hunting and asking different people, I have gone with a company called True Traveller (
You can add as much to your quote or as little. Its well priced and may seem too much at first, but you are getting insurance for 2 years at the end of the day. My insurance cost £605.00. This is a no excess policy which basically means I don’t have to pay upfront for the treatment if I need it. Which maybe helpful if I am really skint in the future. But you can cover yourself for up to 2 years which is the amount of time the UK IEC will allow you to be in the country for. There is no upfront medical and if you are under 25 you can have a free meeting with a Doctor when you get out there. Which means I can set up a prescription for me Inhalers.
When you go to the boarder you will need enough insurance to last you the 2 years otherwise you may have your time cut short. Don’t be scared about paying the money, you may need it and be thankful for the cover.

I have also taken out insurance for all my gadgets. As a photographer I have a lot of kit and need to know that it is covered so I can get jobs and sleep easy knowing that if something goes wrong, I am covered and I am not going to have a really big bill on my lap. I went with Protect Your Bubble ( I went with these guys because I needed world wide cover without a limit and it was the only company that offered it. I’m paying about £30.00 a month, which seems a lot compared to others, but I have a lot of kit. The only downside is that is something does go wrong, it will be send back to my UK address. But I will hopefully not need it! But yet again it is better safe than sorry!

Now I’ve also got myself 3 months worth of prescriptions… which you are allowed to get. My Doctor was not happy about doing this, but they are allowed to do it even though they may give you hell for it.

Print all your documents off! Keep them safe. Put some in your hand luggage and some in your checked in bag. Keep a digital copy on a memory stick and on an email account. You never know what is going to happen and it is better to yet again be safer than sorry.
Also photocopy your passport. There is nothing worse than loosing it and being stuck!

This is all I can think of right now. I’m planning on doing a packing list, but like I said I am very busy and may not have time.
But as I’m all done with all my insurance, I’m going to stick on a film and crack on with my packing.

Keep a note of everything.
